This veggie and beans dish is as simple as cooking gets but does not sacrifice anything when it comes to flavour or goodness. It is absolutely packed with flavour from the incredible spices and herbs. As I am thinking about the flavours, I actually want to go back into the kitchen and smash another bowl of it into my face!
This oven dish full of goodies will make enough for either 3 good sized meals, or you can serve it with some carbs and probably get 4 meals from it. Great meal prep for the week ahead! You could serve this with sweet potato, bulgar wheat, rice, pasta, bread…whatever you fancy! They would all go superbly well.
As I mentioned earlier, you can have this on it’s own or you can serve it with a variety of different things…in this instance, I had mine with a sweet potato, half an avocado and some walnuts. This combo is one that I would recommend highly!
