Ultimate 1 Pan Piri Piri Turmeric Veggie & Beans Meal Prep

This veggie and beans dish is as simple as cooking gets but does not sacrifice anything when it comes to flavour or goodness. It is absolutely packed with flavour from the incredible spices and herbs. As I am thinking about the flavours, I actually want to go back into the kitchen and smash another bowl of it into my face!

This oven dish full of goodies will make enough for either 3 good sized meals, or you can serve it with some carbs and probably get 4 meals from it. Great meal prep for the week ahead! You could serve this with sweet potato, bulgar wheat, rice, pasta, bread…whatever you fancy! They would all go superbly well.

  • 400g tin of butter beans
  • 2-3 peppers. I used red, yellow and green.
  • 1 head of broccoli
  • 1-2 shallots
  • A handful of fresh basil
  • 2 tins of chopped tomatoes
  • A large handful of mange tout
  • 1/2 a red chilli
  • 1/2 a green chilli
  • 3-4 tsp of piri piri spices
  • 3 tsp of turmeric
  • 3 tsp of cayenne pepper
  • Salt & pepper to season

How to cook:

  • Preheat your oven to roughly 200c.
  • Drain and rinse your butter beans.
  • Chop up the peppers, shallots, broccoli and chillis to a size that you like.
  • In a large ovenproof dish (mine is about 20cm x 20cm), throw absolutely everything in and mix it all together.
  • Place in the oven for roughly 25 minutes, stirring half way through.
  • Ding ding…it is ready to serve!

As I mentioned earlier, you can have this on it’s own or you can serve it with a variety of different things…in this instance, I had mine with a sweet potato, half an avocado and some walnuts. This combo is one that I would recommend highly!

If you struggle to prepare side dishes for your week or you don’t get enough veg in your diet, meal prep like this will work a treat for you! 1 pan cooking that will leave you licking your lips!

Happy cooking everyone!

  • This is similar to my sausage casserole: http://www.elsaeats.com/2016/11/spicy-sausage-casserole-couscous-recipe/. It’s amazing what you can throw together with beans, tinned tomatoes, spices and whatever other meat or veggies you have!
