Sweet Potato, Chicken, Salad – Simple Workday Lunch With Energy!

If you struggle to eat healthy for lunch then this is a good easy dish to put together with very little cooking required and it’s a great option for when you are on your lunch break.┬áIt’s certainly better than a sorry looking supermarket sandwich!

I do a lot of these easy lunches at work because they are quick, healthy and as simple as you like. It’s a bloody yummy dish too! So get it made and get your chops around that yumminess.

This is for one person:

  • 2 chicken thighs
  • 1 sweet pepper
  • A handful of baby tomatoes
  • Spinach
  • 1/2 an avocado
  • 1 large or 2 small sweet potatoes

This is a great simple lunch.

I always get chicken thighs from the cooked chicken aisle in my local supermarket. This makes it perfect for a quick and healthy work lunch.

  1. Chicken thighs – these are either already cooked if you get them as I do, or you can oven cook these the night before.
  2. Sweet potato – pop this in the microwave for about 5 minutes or until you can cut into it.
  3. Whilst this cooks just dice up your sweet pepper, tomatoes and avocado.
  4. Serve it all up with some spinach and get a nice bit of salt and pepper on there.
