Smoked Salmon, Cannellini Beans & Pine Nuts Healthy Bagel Delight!

It’s the night before my first half marathon of 2016 and dinner time is here! A wholemeal bagel for my carbs, a little smoked salmon and cannellini beans for protein, pine nuts and butter for my fats and some fruit and veg to top it off. Well slap my arse and call me Susan! This was deeeeeelicious!

Another quick dish that has pretty much everything you could need in a healthy bite! I am full and feeling damn good after that cheeky number! I would definitely recommend you make this one immediately!

Ingredients

  • 40-50g of smoked salmon
  • 1 wholemeal bagel (1/2 a bagel would be fine for some people!)
  • 150g of cannellini beans
  • 1-2 tbsp of pine nuts
  • 1 tbsp of fennel seeds
  • A few cherry tomatoes
  • 1 handful of spinach
  • 1 tbsp of greek yoghurt
  • 1 tbsp of pomegranate seeds
  • A few leaves of fresh basil
  • 4-6 asparagus tips
  • 1 tsp of coconut oil (you can use a different cooking oil if you don’t have any)
  • 1 tbsp butter

Smoked Salmon, Beans & Pine Nuts

Now you have all of your tasty ingredients ready, you need to get yourself a medium sized frying pan on a medium heat, pop your coconut oil in there and you’re ready for the next steps:

  • Fennel seeds, beans, asparagus, tomatoes (sliced in half) and pine nuts….all of these are going straight in the pan.
    Cook for 4 minutes. Give it all a good seasoning with salt & pepper.
  • Give your spinach a good dicing and throw that in the pan along with some butter and your basil. Give it all a good mix.
    Cook for 2 minutes more.

Smoked Salmon, Beans & Pine Nuts

  • Get your bagel in the toaster at this point.
  • Once your bagel pops out of the toaster, get some butter on there and it is time to start plating up!

Get all of those tasty ingredients out of the pan onto your plate with your bagel and finish with a topping of your greek yoghurt and those scrumptious little pomegranate seeds! That right there is a sexy little combo!

Having just eaten this and then written my recipe, I could honestly sink another one of these bad boys! There are some beautiful combos on that plate so get it made and get loving that meal!
