It’s the night before my first half marathon of 2016 and dinner time is here! A wholemeal bagel for my carbs, a little smoked salmon and cannellini beans for protein, pine nuts and butter for my fats and some fruit and veg to top it off. Well slap my arse and call me Susan! This was deeeeeelicious!
Another quick dish that has pretty much everything you could need in a healthy bite! I am full and feeling damn good after that cheeky number! I would definitely recommend you make this one immediately!
Now you have all of your tasty ingredients ready, you need to get yourself a medium sized frying pan on a medium heat, pop your coconut oil in there and you’re ready for the next steps:
Get all of those tasty ingredients out of the pan onto your plate with your bagel and finish with a topping of your greek yoghurt and those scrumptious little pomegranate seeds! That right there is a sexy little combo!
