Simple Lunch Prep – Chicken Avocado Pittas

Finding it hard to eat healthily whilst you’re at the office? Always buying a shitty sandwich from the supermarket because you didn’t plan ahead? These chicken avocado pittas are just what you need! Simple prep before work and you are all set for an awesome lunch that doesn’t just taste good but also provides you with a great balance of protein, fats and carbs that will keep you full for longer and keep you going through the working afternoon.

Got some leftover chicken? Add to that a bit of chopping, a quick mix in a bowl, warm your pittas so they are easier to open up and that is all you will need to do in this quick recipe. As easy you bloody well like!

Ingredients

  • Chicken – either 1 chicken breast cooked up the night before or I just grabbed a couple of cooked thighs from the supermarket at lunch
  • 1/4 cucumber
  • 1 vine tomato
  • 1/2 avocado
  • 1 tbsp greek yoghurt
  • Herbs of your choice. I used fresh basil. Yum bloody yum!
  • 2 wholewheat pittas

Instructions

  1. Your chicken is either leftover from the night before or you can get cooked thighs from the supermarket…so that bit is already done.
  2. Dice your chicken, cucumber, tomato and avocado, add it all to a bowl with the yoghurt and herbs and simply mix it together.
  3. Heat the pittas for 30 seconds so they are easy to cut open.
  4. Add the ingredients into your pittas and Bob’s your uncle! It’s eating time!

It really doesn’t get any simpler than that. Tuck in and enjoy your healthy lunch!
