Ever get hungry between meals and end up eating something terrible? Of course you do! We all bloody do it. Biscuits and cake, they’re my weaknesses! Tasty little bastards. Hopefully this recipe will help you create a little snack that’s much better for you and you won’t feel so guilty for snacking.

Energy bar ingredients

  • 200g pitted dates
  • 200g pecans
  • 30g goji berries
  • 50g pumpkin seeds
  • 25g desiccated coconut
  • 2 tbsp chia seeds
  • 2 tsp 100% cacao
  • 1 inch of finely chopped red chilli
  • 1 tbsp peanut butter – The coconut and peanut one by Meridian Foods is my current obsession
  • 1 tbsp honey

How do I make these yummy energy bars?

Just throw everything in a food processor and blitz the hell out of it! Then pour it out onto a chopping board and shape it into a big rectangle. Cover it with foil and press it down nice and firmly. Get it in the fridge overnight and it’ll be ready the next day.

Now you’ve got some yummy nibbles to have whilst you’re in the office and you start feeling tempted by the bad snacks.
