Pre-race King Prawn Garlic Pasta Delight

This has become a favorite for me a day or two before a big race where I am looking for some super carbs. If you want healthy, simple, quick food that you can prepare and cook in 15 minutes, then look no further than this recipe!

I have literally just finished eating this delicious dish and I feel like I have just had a massive food hug. But a healthy one! Not that food hug feeling the local chippy might give you! ha

Ingredients

  • King prawns
  • Wholemeal Pasta
  • Cherry tomatoes
  • 1/2 an avocado
  • 1 red chilli
  • 2 knobs of garlic butter. Most fish counters give you these free when you buy your fish. If yours doesn’t, you just need garlic and butter. What could be simpler?

‘Right, I have the ingredients you mentioned Pete, but what the heck do I do with them?’ Bingo!…That’s where my cheeky little instructions come in.

Cooking Instructions

  • Boiling water in the pan. Pasta in. Usually takes about 10 mins to cook wholemeal.
  • Dice your toms and avocado to however you like them.
  • Finely chop your chilli. Remove the seeds or keep them in for a big kick up the behind!
  • Once you have about 6 mins left on the pasta put 1 knob of garlic butter in a pan on a medium heat.
  • Throw your prawns, chilli and tomatoes in the pan. Turn everything after 2-3 minutes and cook again on the other side for 2-3 mins to finish them off.
  • Drain the pasta.
  • Pop the pasta back in the empty pan and throw in the other knob of garlic butter along with the diced avocado.
  • Now it is all ready to serve.

As always, a bit of seasoning never goes a miss! This is simple cooking at it’s best in my opinion. Only a handful of ingredients, a tiny amount of preparation, and it is all served within 15 minutes of getting out your chopping board. On top of that you have healthy pasta that will provide you with bags of energy, beautiful prawns giving you a whopper of a protein punch, and your butter and avocado giving you some healthy fats.
