Pesto Smoked Salmon Pasta – Great For Leftovers!

In need of a healthy pasta dish that can be ready in just over 10 minutes? Feast your eyes on this little beauty! I am still licking my lips and I could be forgiven for face planting myself head first into the leftovers too! I will try to resist!

Pasta is on the menu tonight! It might be a few times in the next fortnight as I have a lot of races coming up. This particular dish is so simple it is ridiculous!


  • Wholewheat pasta
  • 1/2 sweet red pepper
  • 1/2 sweet yellow pepper
  • 2 sundried tomatoes
  • 2 vine tomatoes
  • 2 grilled peppers
  • 1/2 small jar of pesto
  • A handful of smoked salmon

How to cook

Cooking this is really bloody easy. So no excuses!

  1. Pasta on. Season with salt & pepper.
  2. In your frying pan – the peppers, tomatoes. Season with salt & pepper.
  3. Once the pasta is done drain and mix everything together in the pasta pan. That is all of the contents of the frying pan with your pesto.
  4. Plate it up and top it with your smoked salmon.

Just cook doubleĀ of everything and you can take pasta to work the next day for lunch or you can pop it in the fridge or freezer for later in the week. In 10 minutes you have made enough for 2 meals. You can’t get easier than that!
