This quinoa dish is absolutely packed full of flavour and goodness and is also a great recipe to make extra and have some good food prepped for work the next day. Winner winner, chicken dinner! I cooked up this recipe earlier in the week and once I had taken a few bites, I had to share it!
It will take about 25 minutes and here’s what you will need:
To make this simple, here is a timings list of what you will be cooking. It will take roughly 25 minutes for everything:
25 minutes to go:
Quinoa in a pan of cold water after rinsing well. Heat the water on high to boiling point and lower to a simmer for 20 minutes.
8 minutes to go:
Boil your kettle. Add this water to a pan and keep on a medium heat.
7 Minutes to go:
Prepare your eggs to be poached. Personally, I wrap my eggs in cling film like a tiny parcel and add pepper and paprika in with the egg. If you have your own poaching methods, I am sure they will do the trick just as well as mine.

5 minutes to go:
Now get your eggs into that bubbling pan of water.
4 minutes to go:
Frying pan on with 1 tsp of coconut oil in, fry the following ingredients:
2 minutes left:
Toss together the following ingredients ready to mix with your quinoa once it is finished cooking:
Once your quinoa finishes cooking, stir these ingredients into it and serve with your pan of yummies that include the chorizo and top with your poached eggs.
Get it served. Get it destroyed! This is a tasty beast of a plate! Slap it right between your chops!
