Harissa Chickpea, Chorizo & Spinach Healthy Food Hug

After a tiny amount of chopping, you simply throw a few ingredients in an oven-proof dish, or a nice terracotta Spanish style dish if you happen to have one, and ‘hey presto’, you’re cooking! There’s 1-minute prep, 20 minutes oven cooking. Simple, honest food.

What are my ingredients? I hear you cry. Have no fear, the yummy goodness is here!

Ingredients

  • 200g chickpeas
  • 1/2 tin (200g) of plum tomatoes
  • 1/2 a sweet pepper
  • 2 squirts of tomato puree
  • Chorizo – I used about 1 thumbs length, diced
  • 1 handful of spinach
  • 1 tsp of ground harissa
  • A sprinkle of feta cheese
  • Fresh basil
  • Salt & pepper
  • A dash of good olive oil – I used an oregano infused oil

Instructions

As mentioned previously, there’s a tiny amount of chopping followed by simply waiting for the oven to go ‘ping!’. Oh, the excitement!

Chop your pepper and chorizo up as the oven is warming to 200c (fan assisted), then throw it in your dish with the tomatoes, puree, chickpeas and spinach along with the harissa, oil, salt & pepper. Give it all a good mix together and pop it in that hot oven for roughly 20 minutes.

As soon as you hear the ‘ping!’, it’s time to get it out of the oven and finish your dish with a sprinkle of feta cheese and some fresh basil. Oh, you sexy little dish! The harissa mixes with the spicy chorizo, the sweetness of the tomatoes and pepper, and everything just starts having a party in your mouth! And this party is a healthy one!
