Chickpea, Peppers & Spinach Healthy Lunchtime Filler

Chickpeas are a superb ingredient, packed with protein and dietary fibre as well as containing the kind of carbohydrates that have don’t cause a high rise in blood sugar levels. This means that they will keep you full for longer. Perfection!

This chickpea recipe is as simple as you like and will be ready with soooo little effort. It just takes a little time in the pan and after that, you can smash it right between your chops!

Chickpea, Peppers & Spinach Healthy Lunch

Ingredients

  • 200g of chickpeas
  • Mixed peppers – I used 1/4 of a red, yellow and green pepper
  • 1/4 tin of chopped tomatoes
  • 1 handful of spinach
  • 2-3 tsp of cumin
  • 2-3 tsp of ground coriander
  • 2-3 tsp of smoked paprika
  • 2-3 tsps of turmeric
  • Salt & pepper

How to cook

This one could not be simpler. Just chop your peppers up and throw everything in a pan on a medium heat. Let everything cook for roughly 10 minutes and get it on a plate ready to eat. There you have it…it’s eating time!
