Cheap & Healthy Lunch Ideas – Smoked Salmon & Eggs

One of the keys to good fitness is what goes on your plate and more importantly what goes in your belly. With this in mind, I am sharing some lunch ideas that will help you stay fit and healthy whilst not breaking the bank. Smoked salmon, scrambled eggs…I have listed exactly what you need and the exact price breakdown so you know how good this will be for the pocket too!

Ingredients

  • 1/3 of a pack of Smoked Salmon – 200g pack from Aldi = £2.75
    Cost for this meal = About £1.00
  • 1 wholemeal bagel – New York Bagels 5 Pack = £1.50
    Cost for this meal = £0.30
  • 2 eggs – 1 dozen medium free range pack = £1.75
    Cost for this meal = £0.30
  • 1/2 avocado – 2 pack of ripe and ready from Aldi = £1.45
    Cost for this meal = £0.73
  • 3/4 cherry tomatoes – 350g pack from Aldi = £0.69
    Cost for this meal = £0.10
  • 1 handful of spinach – 450g bag from Aldi = £1.39
    Cost for this meal = £0.15
  • A few basil leaves – Fresh basil plant from Aldi= £0.79
    Cost for this meal = £0.05

The only other bits you need are a little butter to spread on your toasted bagel, a tiny dash of milk and a little pepper. This shouldn’t be costing more than a few pence. Cost for this meal = £0.15

So this meal, which includes some lovely smoked salmon comes in at a
total cost of £2.78.

That is not a bad price for what is a very good quality lunch. You would do well to beat it!

How to make it

  1. Whisk the eggs in a bowl with milk and pepper – pop in the microwave until they are how you like them.
  2. Bagel in the toaster.
  3. Everything else just needs chopping and arranging how you like on the plate once your bagel and eggs are ready.

Simple! Now what are you waiting for? This is a healthy lunch that once you have made once or twice, it can become a regular on your weekly eats. Good job!
